Uncle Robert's.. Out of This World Pickled Beets and Eggs

Whenever the family gets together for a festive holiday meal we all look forward to Uncle Robert's Pickled Beets and Eggs. This special batch was served during the 2004 Thanksgiving celebration held at Pat and Bill Music's home in Worthington,Ohio. In attendance were family members from Kentucky, Arizona, Pennsylvania and Ohio along with college students from Massachusetts and Montana. Robert's recipe is included below. It will be hard to match Uncle Robert but go ahead and give it a try.

5 Cups Sugar 2 Cups Juice

3 Cups Vinegar

1 1/2 Teaspoons Celery Seed

2 teaspoons Mustard Seed

Cook Beets...Cool.. Peel and Quarter and put in Jars

Bring Vinegar Mixture to Rolling Boil, then Pour over Beets in Jars.
